3 Delicious Savory Brunch Recipes

Brunch seems to be one of the most hyped meals right now. I don't know about you, but I'm all for the hype. I'm not huge on breakfast foods, but if there's a few savory options mixed in, I'm all set. I'm gonna give you my 3 favorite savory brunch recipes.



#1: Single Pan Breakfast Burritos

I know this one's a hit, because my husband asks for these frequently. It's the perfect combo of classic breakfast ingredients without being too spicy. Ya girl can't handle spice, so here's a recipe to match my weak taste buds.





What You'll Need: (makes 2 burritos)

Ingredients:
  • 1 Tbsp Butter

  • 2 eggs (I use an egg per person/burrito)

  • ground sausage*

  • 1/2 cup hash browns

  • 2 flour tortillas (may be substituted to GF)

  • cheddar cheese (sliced or shredded)

  • taco sauce (optional)

*I buy a tube of ground sausage and cut an inch of sausage off one end. I don't use an exact measurement.


Tools:
  • Large frying pan

  • Spatula


How to Prepare it:

  1. Add sausage to the pan. Cook over medium heat until it starts to brown.

  2. Push sausage to one side of the pan. Tilt the pan so the sausage fat runs to the other side. Add hash browns to the side with fat. Cook until sausage is almost cooked through and hash browns start to appear translucent.

  3. Push sausage and hash browns to one side of the pan. Add butter to the empty side. Melt. Add eggs. Scramble. Once eggs are cooked through, mix with the sausage and hash browns.

  4. Place tortillas on separate plates. Add cheese to the center of the tortilla. Spoon half the scrambled mix on top of the cheese so it melts. Drizzle with taco sauce.

  5. Wrap it up and enjoy!


#2: Grandma's Spinach Balls

This is a family recipe handed down to me from my Grandma Lorraine. The best part about this recipe is that you can freeze the extras to eat later. That means you can prepare these in advance if you need to! All you have to do is heat them up again and you're good to go.




What You'll Need: (Makes 40-50 balls)

Ingredients:
  • 4 eggs well beaten

  • 2 cups herb-seasoned stuffing

  • 1 onion, minced

  • 1/2 cup parmesan cheese

  • 2 (10oz) pkg. chopped spinach cooked and drained, or 2 1/2 cups

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1/2 tsp garlic powder

  • 1/2 tsp thyme

  • 3/4 cup melted butter

Tools:
  • large bowl

  • cutting board + paring knife or Ulu knife *

  • medium sauce pan

  • cookie sheets

How to Prepare it:

  1. Preheat oven to 350.

  2. Combine stuffing (cooked, follow pkg. instructions), onion, cheese and seasonings.

  3. Mix eggs, spinach and stuffing mixture. Add melted butter and stir well.

  4. Chill thoroughly. (about an hour)

  5. Roll into 1 inch balls. Place on cookie sheet 1 inch apart.

  6. Bake 15 minutes. Let cool before removing from the sheet.

  7. Enjoy!


#3: The Best Hard Boiled Eggs

I have never had hard boiled eggs this good in my LIFE. The key to these is not over cooking them. When you over cook them, the yolk becomes powdery and dry. The boil time on these is very important!




What You'll Need: (single serving)

Ingredients:
  • 2 large eggs

  • water

  • 1/4 cup onion, diced

  • salt and pepper to taste (may substitute with everything bagel seasoning or creole seasoning)

Tools:
  • small sauce pan

  • cutting board + paring knife or Ulu knife *

  • bowl with cold water

  • paper towel

  • 2 butter knives

How to Prepare it:

  1. Fill the small sauce pan 3/4 full of water. Bring water to a boil. Add eggs. Boil for 8 minutes.

  2. Remove eggs from the burner. Place them in cold water to cool.

  3. Once cool enough to touch (but still warm), place egg on a paper towel on the counter. Gently apply pressure to the egg with the palm of your hand until the egg starts to crack. Roll the egg back and forth until the shell is cracked the whole way around. Shell should easily peel right off.

  4. Rinse the eggs to make sure there's no shell remaining.

  5. Place eggs in a bowl. Use 2 butter knives to cut up the eggs by crisscrossing them and pulling them away from each other repeatedly.

  6. Sprinkle onion, salt and pepper over eggs.

  7. Enjoy!
